Lemon Butter Shrimp and Zoodles

Suggested Piece: 10" Deep Skillet with Utility Rack

Ingredients
12 large shrimp
1 lemon
2-4 tbsp butter
2-3 zucchini (#3 cone)
Fresh parsley (opt.)
Salt & lemon pepper to taste

Directions
Melt butter in bottom of 10” Deep Skillet. Pour off into a dish. Process zucchini into bottom of piece and add half the lemon juiced, salt and lemon pepper. Place rack on top of zucchini and arrange peeled, deveined shrimp on grill. Cover and cook over medium heat until Vapo-Valve™ clicks, reduce heat to low and cook for 10-15 min. Uncover and squeeze lemon over shrimp and drizzle with remaining butter. Garnish with parsley.

Summer Fresh Corn Zucchini Chowder

Suggested Piece: 7 Qt. Roaster

Ingredients
4 strips bacon, chopped
2 c yellow onion, #2 or #3 cone
4 celery stalks, #2 cone
2 med carrots, #1 or #2 cone
4 garlic cloves, #1 cone
1 tsp. dried thyme
4 med potatoes, #3 cone
8 c. chicken or vegetable broth
2 bay leaves
5 1/2 c. frozen corn
2 med zucchini, #2 or #3 cone
2 c. half & half
Salt & pepper to taste
Chopped fresh parsley to garnish
Cayenne pepper, to serve (opt.)

Directions
In bottom of 7 Qt. Roaster over medium heat add bacon and cook until brown (3-4 minutes). Add onion, celery, carrots, garlic, and thyme; cook until vegetables begin to soften (5 minutes). Add potatoes, broth, bay leaves, zucchini, and corn; season with salt & pepper to taste. Cover and cook over medium heat until Vapo-Valve clicks, then reduce heat to low and continue cooking for 15 minutes or until vegetables are completely tender. Discard bay leaves and transfer 4 cups of chowder to a blender; puree until smooth. Stir the mixture back into the 7 Qt. Roaster. Add half & half, cover and cook just until heated through. Serve garnished with fresh chopped parsley and sprinkle fo cayenne pepper (opt.)

Kung Pao Beef Zoodles

Suggested Piece: 10" Chef Gourmet Skillet

Ingredients
4 medium zucchinis (#2 cone)
16 oz steak, cut into 1" pieces
Salt & pepper to taste
1 red bell pepper (#3 cone)
2 tsp sesame oil
4 cloves garlic (#1 cone)
2 tsp ginger (#1 cone)
4 tbsp crushed dry roasted peanuts
4 tbsp green onions, sliced

Sauce:
3 tbsp soy sauce
2 tbsp balsamic vinegar
2 tsp hoisin sauce
1 tbsp red chili paste
4 tsp stevia (sugar)

Directions
Using the #2 cone processes zucchini's into "noodles" and set aside. Salt and pepper steak and brown in 10" Chef Gourmet Skillet over medium high heat. Reduce heat to medium and add bell pepper, sesame oil, garlic, and ginger. Cover and cook over medium heat until Vapo-Valve clicks. Reduce heat to low and cook for approximately 10 minutes. Meanwhile, whisk together all ingredients for sauce in small bowl. Pour sauce over steak mixture and heat through. Remove from heat and fold in zucchini "noodles". Serve immediately.

Summer Pasta Salad

Suggested Piece: 5 Qt. Wok

Ingredients
8 oz. farfalle pasta, cooked
1 zucchini (#3 cone)
2 yellow squash (#3 cone)
2 nectarines, chopped
1/3 c. parsley, chopped
1/4 c. sliced almonds, toasted
Salt & pepper to taste

Lime Vinaigrette Dressing
1 tbsp. lime zest
2 tbsp. lime juice
2 tbsp. white balsamic vinegar
1 tbsp. Creole mustard
1 1/2 tsp. honey
1 garlic clove (#1 cone)
1/2 tsp. salt
1/2 tsp. black pepper
1/2 c. extra virgin olive oil

Directions
Rinse prepared pasta with cold water, and drain well. Gently fold together pasta, zucchini, yellow squash, nectarines, and parsley in 5 Qt. Wok. Whisk together lime zest, lime juice, mustard, honey, garlic, salt, and pepper in a small bowl. Add olive oil in a slow, steady stream, whisking constantly until smooth. Drizzle dressing over salad. Add additional salt and pepper to taste.

Suggestions: Add shredded chicken to salad for a protein boost! For a gluten-free option use quinoa or rice pasta.

Zucchini Carpaccio

Suggested Piece: 12" Deep Dish Griddle

Ingredients
1 lemon
2 tbsp. extra virgin olive oil
1 tsp. salt
1 tsp. black pepper
2 large zucchini (#4 cone)
1 avocado
Pine nuts (or salted roasted almonds)

Directions
From 1 lemon, finely grate 1/2 tsp. zest and squeeze 2 tbsp. juice into a small bowl. With wire whisk, stir in extra virgin olive oil, salt, and freshly ground black pepper. Process zucchini on #4 cone and arrange slices on large serving plate with overlapping layers with avocado. Drizzle lemon dressing all over vegetables and top with almonds or pine nuts.

Chocolate Berry Trifle

Suggested Piece: 11" Large Skillet

Ingredients
1 box devils food cake mix
1 zucchini (#1 cone)
3 eggs
1 pint strawberries, halved
1 pint blueberries
1 pint raspberries
1 qt. heavy whipping cream
2 tbsp. unsweetened cocoa
2 tbsp. sugar

Directions
Combine cake mix, zucchini, and eggs in large mixing bowl. Bake cake using the stove top method. Let cool completely. Cut into 1-inch cubes. In a stand mixer whip heavy cream, cocoa, and sugar until stiff peaks form. In a large glass bowl or trifle dish, layer half of the cake cubes, half of the whipped topping, and half of the berries. Repeat!

Summer Veggie Medley

Suggested Piece: 11” Large Skillet

Ingredients
2 zucchini
2 yellow squash
1 pack asparagus
1/4 c. butter
4 cloves garlic

Directions
Add butter into cold 11” Large Skillet, and then shred the zucchini and the squash one the number #3 cone, and the garlic in the #1 cone. Chop asparagus into bite size pieces, and add to skillet. Cook over medium heat. When Vapo-Valve clicks reduce heat to low for approx. 10-15 minutes.
Notes: A mixture of 2 1/2 teaspoons (total) dried Italian herbs can be substituted for the fresh. To give it some kick, you could add crushed red pepper flakes. And to add some tang, whisk in a few teaspoons of mustard!

Vegetarian Enchiladas

Suggested Piece: 12" Electric Skillet

Ingredients
1 can (28 oz.) green or red enchilada sauce
1 can green chilis
1 pkg. corn tortillas
1 carrot (#1 cone)
1 yellow squash (#1 cone)
1 zucchini (#1 cone)
8 oz. cheese (Monterey Jack, Cheddar, Jalepeno Jack)
2 cans beans, drained (black or pinto)
1 lb. ground beef (opt.)

Directions
Cover bottom of skillet with enchilada sauce. Layer the following in order:
(1) Corn tortillas
(2) 1 can of beans (or 1/2 the ground beef)
(3) 1/2 yellow squash (#1 cone)
(4) 1/2 zucchini (#1 cone)
(5) 1/2 carrot (#1 cone)
(6) 1/2 can green chilis
(7) 4 oz. cheese (#1 cone)
Repeat #1 - #7 for a 2nd layer. Top with remaining enchilada sauce and top with any remaining cheese. Set temperature to 350F until VapoValve clicks. The reduce temperature to 185F for approx. 15 min. For an alternative version of this recipe substitute squash with various colors of bell pepper and/or add an onion (#2 cone) for a different flavor!

Vegetarian Red Pozole with Black Beans and Summer Squash

Suggested Piece: 10 Qt. Roaster



Ingredients
½ tablespoon canola oil
1 medium yellow onion (#2 cone)
2-3 garlic cloves (#1 cone)
2 poblano peppers, roasted, seeded and diced (use canned, if needed)
2 small zucchini (#3 cone)
2 small yellow squash (#3 cone)
1 ½ teaspoons dried oregano
1 teaspoon ancho chili powder
1 ½ teaspoons ground cumin
½ teaspoon each kosher salt and black pepper, or to taste
1 (25-ounce) can Mexican style hominy, rinsed and drained
2 (15-ounce) cans Black Beans, drained
2 (10-ounce) cans Diced Tomatoes and Green Chiles
1 (20-ounce) can Red Enchilada Sauce
1 (32-ounce box) vegetable broth (4 cups)
For serving:
Fresh cilantro
Sliced radishes (#4 cone)
Diced Avocado
Green Cabbage (#4 cone)
Fresh limes

Directions
In a 10 Qt. Roaster over medium heat add onion and saute for 5-6 minutes, or until onions are translucent. Add garlic, poblano peppers, zucchini and yellow squash; and saute for an additional 2-3 minutes.nStir in the oregano, ancho chili powder, cumin, salt and black pepper. Cook, stirring constantly, until spices are fragrant, about 30 seconds. Add the hominy, black beans, diced tomatoes and green chiles, enchilada sauce and vegetable broth to the pot. Stir to combine and cover with lid. When Vapo-Valve clicks, reduce heat to low and cook for 20 minutes.
*For a non-vegetarian alternative cook bone-in chicken thighs in bottom of 10 Qt. Roaster before sauteing the onion. Follow the remainder of the recipe as written, but don't forget to take out the bones before serving!!!

Grilled Zucchini & Yellow Squash

Ingredients
Zucchini
Squash
Salt & pepper to taste

Directions
Spray Smokeless Broiler grill grates with a little cooking spray. Slice zucchini and squash in 1-inch pieces, salt and pepper to taste. Grill approx. 2 min. per side or until warmed through.

Arroz con Pollo


Suggested Piece: Multipurpose 5 Qt (MP5)

Ingredients
2 lbs. boneless/skinless chicken breasts, cubed
1 onion (#2 or #3 cone)
32 oz. chicken broth, low sodium
4 oz. can tomato sauce, low sodium
4 oz. can diced green chilies
1 tsp. cumin
1 tsp. chili powder
1 tsp. garlic powder
1 tsp. sea salt
2 c. brown rice, parboiled
2-3 zucchinis (#3 cone)
1 container grape tomatoes, halved
1/4 c. cilantro, chopped
2 medium limes, garnish

Directions
Preheat MP5 to 300°F. Add chicken and onions. Cover and allow chicken to cook for 15 minutes, stirring intermittently. In medium bowl, whisk together chicken broth, tomato sauce, green chilies, and spices. Add broth mixture to chicken and onions in MP5 and combine. Add brown rice to chicken mixture and gently fold together. Reset MP5 temperature to RIC1, cover, and continue to cook. Once the timer set at RIC1 expires, add zucchini into electric roaster, re-cover, and allow to cook for 3-5 minutes. Set heat to 150°F to keep warm prior to serving. Plate and sprinkle with grape tomatoes and cilantro. Garnish with lime wedges.

Saladmaster Stuff

Suggested Piece: 3 Qt Saucepan & 2.5 Qt Perforated Basket

Ingredients
1 - 1.5 lbs. ground beef or ground turkey
1 can condensed cream soup (i.e. chicken, mushroom, celery)
8 oz. cheese (#1 cone)
Variety of vegetables
cabbage
potatoes
onions
carrots
zucchini
celery
spinach

Directions
Using 3 Qt Saucepan & 2.5 Qt Perforated Basket *degrease your ground meat. Once cooked through, pour out the water in the bottom of the 3 Qt Saucepan and transfer ground meat into it. Using the #2 or #3 cone, cut and layer as many vegetables as you wish on top of the cooked meat. Above are just a few examples of vegetables... you decide what to use when creating your own "stuff" casserole! Add one large can of condensed cream soup, covering all the vegetables. Sprinkle cheese on top and cover with lid. Cook over medium heat until Vapo-Valve clicks, then reduce heat to low for approximately 30 minutes. For best results allow it to cool for a few minutes before serving.

*If using ground beef, degrease the meat by cooking it in the 2.5 Qt Perforated or Culinary Basket over 1/2 inch of water in the 3 Qt. Saucepan on medium-high temperature. While cooking the fats & oils will drip into the water instantly making your meat leaner!

Pumpkin & Black Bean Chili

Suggested Piece: 5 Qt Roaster, Saladmaster Machine

Ingredients
1 (15-oz) can pumpkin puree
1 (15-oz) can diced tomatoes (your favorite flavor!)
1 (15-oz) can vegetable broth
2 (15 oz) cans black beans
3 cloves chopped garlic (#1 cone)
1 zucchini (#3 cone)
1 yellow squash (#3 cone)
1 small onion (#2 cone)
1-2 cups cooked quinoa
Salt, pepper, oregano, cumin, and chili powder to taste
1 lb. ground beef (opt.)

Directions
Sauté processed garlic, zucchini, squash, and onion in bottom of 5 Qt Roaster on medium heat. Add all other ingredients and medium-click-low until veggies are tender, a minimum of 30 minutes. Flavors meld and blend the longer it sits on low. 

Optional: If using ground beef, degrease the meat by cooking it in the 3 Qt. Inset or Culinary Basket over 1/2 inch of water in the 3 Qt. Roaster on medium-high temperature. While cooking the fats & oils will drip into the water instantly making your meat leaner!

Veggie Frittata

Suggested Piece: 10" Gourmet Skillet

Ingredients
6 eggs
1 tbsp. sour cream
1 small zucchini (#2 cone)
1 c. cherry tomatoes, halved
1/4 onion (#2 cone)
5 mushrooms (#4 cone)
Cheese (opt.)

Directions
Beat 6 eggs with 1 tbsp. sour cream in a bowl. 
Process zucchini, onion, and mushroom into 10" Gourmet Skillet and add halved cherry tomatoes. 
Saute over medium heat until zucchini is al dente. Pour eggs over veggies and cover with lid.
Reduce heat to medium-low (do not allow Vapo-Valve to click). Once eggs are cooked through top with cheese if desired!

Chicken Quinoa Bites

Suggested Piece: Cookie Sheet

Ingredients
3 eggs
2 c. cooked quinoa
1 c. shredded chicken
1/2 c. frozen peas
1/2 c. carrot, #1 cone
1/2 c. zucchini, #1 cone
1/2 c. mozzarella cheese, #1 cone
1/2 c. mild cheddar cheese, #1 cone
1 tbsp. fresh cilantro, chopped
1/2 tsp. fresh cracked ground pepper

Directions
Preheat oven to 350F. Cook quinoa according to package directions and let cool. In a large mixing bowl whisk together eggs. Stir in quinoa, chicken, cheese, veggies, herbs and pepper. Mix well. Using a spoon form mixture into balls on a cookie sheet. Bake 20 minutes or until eggs are set. Remove from oven and let cool.

Gluten Free Chocolate Zucchini Bars

Suggested Piece: 1 Qt. Sauce Pan, Bake & Roast Pan

Ingredients
1/2 c. organic coconut oil
1/2 c. chocolate chips
2 tbsp. organic cocoa powder
1/2 c. coconut sugar
1 c. tapioca flour
1/2 tsp. baking soda
2 eggs
1 tsp. vanilla
1/2 c. organic zucchini, #1 cone
Olive oil cooking spray (opt.)

Directions
Preheat oven to 350F. In 1 qt. sauce pan melt the chocolate chips and coconut oil on low heat, stirring occasionally. In a medium mixing bowl combine the cocoa powder, coconut sugar, tapioca flour, and baking soda. Add eggs, vanilla, melted chocolate, and zucchini. Stir to combine. Spray bake & roast pan with olive oil (optional) and pour in mixture. Bake for 20 minutes or until bake through.

Coleslaw Salad


Suggested Piece: Cold Bowl

Ingredients
¼ green cabbage head, sliced, #4 cone
2 radishes, sliced, #4 cone
1 carrot, sliced lengthwise, #4 cone
1 carrot, shredded, #1 cone
1 stalk of celery, shredded, #2 cone
¼ red cabbage head, shredded, #2 cone
½ zucchini, #3 cone
½ zucchini, sliced, #5 cone
1 apple, sliced, #5 cone
Citrus, zest & juice, #1 cone
1/8 c. pineapple juice

Directions
Combine all ingredients in Cold Bowl and toss.

Pineapple Upside-Down Cake


Suggested Piece: 9” Small Skillet

Ingredients
4 pineapple rings
½ box lemon cake mix
2 eggs
2 radishes, shredded (#1 cone)
¼ carrot, shredded (#1 cone)
1 stalk of celery, shredded (#1 cone)
¼ c. red cabbage wedge, shredded (#1 cone)
¼ small zucchini, shredded (#1 cone)

Directions
Spray 9” skillet with a non-stick spray. Place 4 pineapple rings in bottom of skillet. In medium bowl add ½ box lemon cake mix, 2 eggs, and all the shredded vegetables; mix well. Pour batter into 9” skillet, cover, and cook on a medium-low temperature. At a true medium-low temperature the Vapo-Valve will not click. Bake for approximately ½ the time specified in the recipe or until the top of cake is moist and springs back when touched.

Tip: It doesn’t matter what vegetables you use, it just needs to be measured to approximately 1 cup shredded vegetables.
