To-Die-For Carrot Cake

Suggested Piece: 12" Electric Skillet

Ingredients
Bowl #1:
1 1/4 c apple (#1 cone, approx 2 apples)
2 c sugar
3 eggs, room temperature

Bowl #2:
2 c whole wheat flour
1 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon

Bowl #3:
2 c carrots (#1 cone, approx 3 carrots)
1 c shredded sweetened coconut
1 c walnuts (#2 cone)
1 tsp vanilla
1 c crushed pineapple in juice, undrained

Cream Cheese Frosting:
1/2 c butter softened
8 oz Neuftchatel cream cheese
1 lb powdered sugar

Toppings:
- toasted pecans
- shredded sweetened coconut

Directions
Preheat 12" Electric Skillet on 180F. Combine bowl #1, and add bowl #2, then bowl #3. Lightly coat skillet with coconut oil, pour cake batter in warm skillet, and cover. Increase temperature to 250F and "bake" for 30-40 minutes, or until the cake is no longer wet on top and springs to the touch. (Remember, cakes/dough should never "click.") Invert on a rack or plate and let cool. Meanwhile, make the frosting! Beat the butter and cream cheese until nice and fluffy. Add in the vanilla and powdered sugar, continue to beat until smooth. Apply a generous dollop of frosting on top a cooled cake and spread. Finish by sprinkling with toasted pecans and/or shredded sweetened coconut. For best results refrigerate for an hour before serving.

Alternative: To bake in the oven, pour batter in either a 9x13 Bake & Roast Pan or two (2) 9" Cake Pans. Bake at 350F for 35-40 minutes or until inserted toothpick comes out clean.

Winter Fruit Salad

Suggested Piece: 6.5 Qt. Insulated Bowl

Ingredients
3 c. pineapple, cubed
1 c. kiwis, sliced
2 c. mandarin or clementine orange segments
1/2 c. pomegranate arils
3 tbsp. lemon or lime juice
3 tbsp. honey
1 tbsp. poppy seeds
Fresh mint leaves, garnish

Directions
Place the pineapple, kiwi, oranges, and pomegranate arils in a 6.5 Qt. Insulated Bowl. In a small bowl whisk together the lemon juice, honey, and poppy seeds. Pour the poppy seed dressing over the fruit and toss gently to coat. Garnish with mint leaves if desired.

Honey Lime Rainbow Salad

Suggested Piece: 3.5 Qt. Cold Bowl

Ingredients
1 lb. fresh strawberries (#3 cone)
1 lb. fresh pineapple, diced
12 oz. fresh blueberries
12 oz. red grapes, halved
4 kiwis, peeled and diced
1 (15 oz.) can mandarin oranges in juice, drained well and sliced into halves
2 ripe bananas (#4 cone)
Honey Lime Dressing
1/4 c. honey
2 tsp. lime zest (zest of 2 medium limes #1 cone)
1 tbsp. fresh lime juice (#1 cone)

Directions
Add all fruit to a 3.5 Qt. Cold Bowl. In a separate small mixing bowl, whisk together the honey, lime zest and lime juice. Pour over fruit just before serving and toss to evenly coat (as it sits for a few minutes the juices will gather at the bottom, so toss again before plating).
Tip: Freeze bananas before processing on #4 cone to get cleaner slices.

Pork Tenderloin with Cranberry Salsa

Suggested Piece: 5 Qt Roaster or 11" Large Skillet and Medium Cold Bowl

Ingredients
Pork
1 lb. Pork tenderloin (all visible fat discarded)
1/4 tsp. Paprika
1/4 tsp. Salt
1/4 tsp. Pepper
1/8 tsp. Garlic powder
Salsa
1 c. canned Pineapple chunks (or fresh if you have it!)
1/2 c. Dried cranberries
1/4 c. Red onion (#2 cone)
1 medium Poblano pepper, seeded, finely chopped
1 tsp. Ginger (#1 cone)
1/2 tsp. Ground cinnamon

Directions
Place pork in bottom of piece being used. In a small mixing bowl combine paprika, salt, pepper, and garlic powder. Rub mixture over pork and let stand while making salsa. Combine all ingredients for salsa in Medium Cold Bowl. Spoon salsa over pork. Cover and cook until Vapo-Valve clicks, reduce heat to low for approx. 30 minutes.

Cooking Tip: For a milder dish or if poblanos are not available, use a mediumm green bell pepper instead. If you'd still like a little heat, add 1/8 tsp. dried red pepper flakes to the salsa.

Pineapple Salsa

Suggested Piece: 3.5 Qt. Insulated Bowl

Ingredients
1 c. diced pineapple
1 c. green, red, yellow, and orange peppers
1/3 c. onion (#2 cone)
1/3 c. cilantro, chopped
Salt & pepper to taste
2 limes, juiced (#1 cone)

Directions
Using the Saladmaster Food Processor chop onion with #2 cone and juice limes with #1 cone. Combine remaining items in 3.5 Qt. Insulated Bowl. Mix well and serve with tortilla chips!

Pineapple Cucumber Lime Salad


Suggested Piece: Saladmaster Machine, Insulated Bowl, Santoku Knife

Ingredients
1 pineapple, chopped
1 English cucumber (#3 cone)
2 limes, zested & juiced (#1 cone)
1/3 c. cilantro, roughly chopped
Salt and pepper to taste (opt.)

Directions
Combine all ingredients and toss lightly to distribute the lime juice and zest evenly. Season with salt & pepper (opt.) Serve immediately or keep chilled until ready to serve.

Pineapple Angel Food Cake

Suggested Piece: Bake & Roast Pan

Ingredients
1 box Angel Food cake mix
1 can crushed pineapple

Directions
Mix together in a bowl (mixture will be foamy). Pour batter into greased Bake & Roast Pan and bake according to package directions. Top with Cool Whip and serve.

Ham

Suggested Piece: 7 Qt Roaster

Ingredients
Ham
Cloves
1 c. Dijon mustard
2 tbsp. real maple syrup

Directions
Score top of ham; place cloves in center of cross. Whisk together mustard and syrup; pour over ham.Cook covered over medium heat until Vapo-Valve clicks. Reduce heat to low and cook 15 minutes per pound (e.g. 3 lb. ham = 45 minutes).

Alternate versions:
A - Cover ham with 1/3 c. brown sugar & 1 can crushed pineapple (strained or un-strained).
B - Pour Pineapple Habanero Sauce (COSTCO) over ham.

Ambrosia Salad

Suggested Piece: Saladmaster Cold Bowl

Ingredients
1 c. shredded coconut
1 c. mini marshmallows
1 c. sour cream
Fruit Suggestions:
Pineapple, chunks
Apples (#3 cone)
Bananas, sliced
Peaches (#3 cone)
Pears (#3 cone)
Grapes, halved
Cherries, halved & pitted
Blueberries
Strawberries

Directions
Choose from the list of fruit 4 or more to use in your Ambrosia Salad. Try to choose fruit that is in season (it generally tastes better!) Process fruit into Saladmaster Cold Bowl. Fold in shredded coconut, mini marshmallows, and sour cream. Chill until ready to serve.

Coleslaw Salad


Suggested Piece: Cold Bowl

Ingredients
¼ green cabbage head, sliced, #4 cone
2 radishes, sliced, #4 cone
1 carrot, sliced lengthwise, #4 cone
1 carrot, shredded, #1 cone
1 stalk of celery, shredded, #2 cone
¼ red cabbage head, shredded, #2 cone
½ zucchini, #3 cone
½ zucchini, sliced, #5 cone
1 apple, sliced, #5 cone
Citrus, zest & juice, #1 cone
1/8 c. pineapple juice

Directions
Combine all ingredients in Cold Bowl and toss.

Pineapple Upside-Down Cake


Suggested Piece: 9” Small Skillet

Ingredients
4 pineapple rings
½ box lemon cake mix
2 eggs
2 radishes, shredded (#1 cone)
¼ carrot, shredded (#1 cone)
1 stalk of celery, shredded (#1 cone)
¼ c. red cabbage wedge, shredded (#1 cone)
¼ small zucchini, shredded (#1 cone)

Directions
Spray 9” skillet with a non-stick spray. Place 4 pineapple rings in bottom of skillet. In medium bowl add ½ box lemon cake mix, 2 eggs, and all the shredded vegetables; mix well. Pour batter into 9” skillet, cover, and cook on a medium-low temperature. At a true medium-low temperature the Vapo-Valve will not click. Bake for approximately ½ the time specified in the recipe or until the top of cake is moist and springs back when touched.

Tip: It doesn’t matter what vegetables you use, it just needs to be measured to approximately 1 cup shredded vegetables.
