Rice & Quinoa Breakfast Pudding

Suggested Piece: 2 Qt. Saucepan/Small Skillet

Ingredients
2/3 c. quinoa
½ c. long grain brown rice
3-4 c. almond milk, unsweetened
1 tbsp. chia seeds
1 tbsp. + 1 tsp. honey
1 tbsp, + 1 tsp. unrefined organic brown sugar
1 ¼ tsp. salt
1 tbsp. vanilla extract, or more to taste
3 tsp. pumpkin pie spice

Directions
Pour the quinoa & rice into saucepan. Level it out and place your index finger so that it is touching the surface of the rice. Add enough water so that it comes up to your first knuckle — use the crease on the palm-side of your finger. Cover with lid and cook over medium heat until Vapo-Valve™ clicks rapidly, then reduce heat to low for approximately 20-30 minutes. Meanwhile combine almond milk, chia seeds, honey, brown sugar, salt, vanilla, and pumpkin pie spice in separate bowl; allowing chia seeds to expand in milk mixture. Stir in milk mixture with cooked quinoa and brown rice. Serve immediately!

Easy Steak Fajitas

Suggested Piece: MP5

Ingredients
2 lbs rump, skirt, or flank steak, cut into strips
1 pkt low-sodium fajita seasoning
1 (14.5 oz) can petite diced tomatoes with green chilies
1 yellow onion, sliced
3 bell peppers (red, yellow, orange, or green), sliced
4 cloves garlic (#1 cone)
1 lime, zest & juice (#1 cone)
1 tbsp. honey
1/2 c. fresh cilantro, chopped
For serving:
small tortillas, sour cream, salsa, guacamole, cheese

Directions
In bottom of MP5 layer steak strips, fajita seasoning, diced tomatoes with green chilies, onion, bell peppers, and garlic. Cover and and set probe temperature to 350F. When Vapo-Valve clicks reduce heat to low and continue cooking for 30-45 minutes. In the meantime, zest and juice lime on food processor and whisk together with honey. Just before serving pour off 1 c. of liquid from fajitas. Then fold in honey-lime mixture and garnish with cilantro.

Broccoli Apple Salad

Suggested Piece: 3.5 Qt Insulated Bowl

Ingredients
4 c broccoli (#2 & #3 cones, approx 2 heads)
2 small gala apples (#3 cone)
1 c walnuts (#2 cone)
1 c carrots (#2 cone, approx 1 carrot)
1/2 c golden raisins or dried cranberries
1/4 c red onion (#2 cone, 1/4 onion)

Dressing:
3/4 c plain Greek yogurt
1/3 c mayonnaise
1 1/2 tbsp apple cider vinegar
3 tbsp honey or agave
1/4 tsp salt (more to taste)

Directions
In small mixing bowl whisk together all the ingredients for the dressing. Chill until ready to use. In 3.5 Qt Insulated Bowl process walnuts, broccoli stalks, carrots, and onion on #2 cone. Change to #3 cone to process broccoli florets and apples; add golden raisins. Pour in dressing and toss until evenly coated.

Chopped Mexcian Salad with Lime


Suggested Piece: Food Processor & Oval Baking Dish

Ingredients
1/2 c lime juice
1 tsp crushed red pepper flakes
1 1/2 tsp honey
15 oz black beans, rinsed
2 c frozen corn, thawed
2 ripe avocados
1/4 c EVOO
3 cloves garlic (#1 cone)
6 c romaine lettuce
1 c jicama (#3 cone)
1 red bell pepper (#2 cone)
1/2 Monterey jack cheese (#2 cone)

Directions
In a small bowl whisk together lime juice, EVOO, crushed red pepper flakes, garlic, and honey. Dressing is best served at room temperature. Spread lettuce evenly across a Oval Baking Dish. Arrange beans, jicama, corn, bell pepper, and avocados side by side on top of lettuce. Garnish with cheese. Cover and refrigerate until chilled, for at least 1 hour. Drizzle with dressing before serving.

Winter Fruit Salad

Suggested Piece: 6.5 Qt. Insulated Bowl

Ingredients
3 c. pineapple, cubed
1 c. kiwis, sliced
2 c. mandarin or clementine orange segments
1/2 c. pomegranate arils
3 tbsp. lemon or lime juice
3 tbsp. honey
1 tbsp. poppy seeds
Fresh mint leaves, garnish

Directions
Place the pineapple, kiwi, oranges, and pomegranate arils in a 6.5 Qt. Insulated Bowl. In a small bowl whisk together the lemon juice, honey, and poppy seeds. Pour the poppy seed dressing over the fruit and toss gently to coat. Garnish with mint leaves if desired.

Tart Apple Coleslaw

Suggested Piece: 1.5 Qt. Insulated Bowl

Ingredients
1 Granny Smith apple (#2 cone)
1 stalk celery (#2 cone)
1 medium green pepper, diced
1/4 c. olive oil
Juice of 1 lemon
2 tbsp. honey
1 tsp. celery seed
Freshly ground pepper to taste
Sliced almonds (opt.)

Directions
Combine all the ingredients in a bowl and toss well to mix. Chill for an hour or more before serving.

Honey-Lime Vinaigrette

Suggested Piece: Glass Pint Jar

Ingredients
1/2 c. olive oil
Juice of 1 lime
1 tsp. honey
1/4 tsp. ground cumin
Pinch chili powder
Freshly ground pepper to taste

Directions
Put all ingredients in a jar or container with a lid and shake until combined. Use to dress salad right before serving.

Classic Vinaigrette

Suggested Piece: Glass Pint Jar

Ingredients
1/2 c. olive oil
3 tbsp. red wine vinegar
1 tsp. Dijon mustard
1 garlic clove, minced
1 tsp. honey
Freshly ground pepper to taste

Directions
Put all ingredients in a jar, close to the lid and shake until emulsified. Alternatively, you can put everything in a blender and blend. Use to dress any salad right before serving and store the remaining dressing in the refrigerator for up to 3 days.

Coconut Blueberry Lemon Bars

Suggested Piece: Two Burner Griddle

Ingredients
Crust
2 c. shredded coconut
1 c. almond flour
1/4 tsp. salt
4 tbsp. honey
4 tbsp. coconut oil
2 - 3 c. blueberries, chopped
2 egg whites

Filling
6 eggs + 4 egg yolks
2 tbsp. honey
4 tbsp. lemon zest
1 c. lemon juice
2/3 c. almond flour
Shredded coconut for sprinkling

Directions
Preheat oven to 400F and line a two burner griddle with parchment paper. Melt the coconut oil in a 2 Qt. Saucepan over medium heat. Add honey, shredded coconut, almond flour, and salt to the pan. Mix well until combined and remove from the heat. Let it cool to room temperature and add the blueberries. Add on egg while to the mixture and stir. Transfer the mixture on the bottom of the prepared pan and press down firmly. Bake for 20 minutes and remove from the oven. Let it cool. To prepare the filling beat together the eggs and egg yolks until frothy. Add the remaining ingredients and beat for a couple more minutes. Reduce the oven heat to 375F. Pour the filling over the cooled crust and bake for another 20 minutes or until the center is set. Let the bars cool completely. Cut into squares, dust with more shredded coconut, and serve.

Summer Pasta Salad

Suggested Piece: 5 Qt. Wok

Ingredients
8 oz. farfalle pasta, cooked
1 zucchini (#3 cone)
2 yellow squash (#3 cone)
2 nectarines, chopped
1/3 c. parsley, chopped
1/4 c. sliced almonds, toasted
Salt & pepper to taste

Lime Vinaigrette Dressing
1 tbsp. lime zest
2 tbsp. lime juice
2 tbsp. white balsamic vinegar
1 tbsp. Creole mustard
1 1/2 tsp. honey
1 garlic clove (#1 cone)
1/2 tsp. salt
1/2 tsp. black pepper
1/2 c. extra virgin olive oil

Directions
Rinse prepared pasta with cold water, and drain well. Gently fold together pasta, zucchini, yellow squash, nectarines, and parsley in 5 Qt. Wok. Whisk together lime zest, lime juice, mustard, honey, garlic, salt, and pepper in a small bowl. Add olive oil in a slow, steady stream, whisking constantly until smooth. Drizzle dressing over salad. Add additional salt and pepper to taste.

Suggestions: Add shredded chicken to salad for a protein boost! For a gluten-free option use quinoa or rice pasta.

Honey-Beer Braised Ribs

Suggested Piece: 12" Electric Skillet (EOC)

Ingredients
1/2 c. packed brown sugar
1 tsp. pepper
3/4 tsp. salt
6 lbs. pork baby back ribs
1/4 c. honey
1 bottle (12 oz.) dark beer
1/4 c. apple cider vinegar
1 bottle (18 oz.) barbecue sauce

Directions
Combine the brown sugar, pepper, and salt; rub over ribs. Place ribs bone side down in 12" EOC. Drizzle with honey. Combine beer and vinegar; pour around ribs. Cover and set temperature to 350F until Vapo-Valve clicks. Reduce temperature to 185F for 2 hours, or until tender. Pour off excess liquid and cover with barbecue sauce.

Kale, Apple & Quinoa Salad

Suggested Piece: 1 Qt. Saucepan 3.5 Insulated Bowl


Ingredients
1/2 c. tricolor dry quinoa
6 c. slightly packed chopped kale
(It will take about 1 1/2 bunches. Remove thick ribs before chopping.)
2 crisp gala apples (#3 cone)
1 c. walnuts, lightly toasted and roughly chopped
1/2 c. dried cranberries
4 oz. goat cheese, crumbled
Dressing
1/2 c. olive oil
1/4 c. fresh lemon juice
2 tbsp. honey
1 1/2 tsp. dijon mustard
Salt to taste

Directions
Cook quinoa in 1 Qt. using knuckle method and cool completely. While quinoa is cooling, whisk together all of the dressing ingredients in a jar or bowl. Add kale to 3.5 Qt. Bowl, whisk dressing once more then pour 3/4 of the dressing over kale and toss until kale is evenly coated. Cover bowl and chill 15 minutes (adding the dressing and letting it rest helps soften kale a bit).
Remove salad from refrigerator, add apples, quinoa, walnuts and cranberries. Pour remaining dressing over salad then toss. Add goat cheese and toss just lightly. Serve or store covered in refrigerator for up to 4 hours.

Pear, Apple, & Chicken Salad

Suggested Piece: 3.5 Qt. Insulated Bowl

Ingredients
2 chicken breasts, cooked & chopped
1 pear (#3 cone)
1 apple (#3 cone)
3 c. romaine lettuce, chopped
1/2 c. walnuts (toasted and drizzled with 2 tsp. honey)
1/2 c. Gorgonzola cheese
Dressing
1/4 c. fresh lemon juice (#1 cone)
1/4 c. EVOO
4 tbsp. honey
Balsamic vinegar
1/8 tsp. ginger
1/4 tsp. salt
1/2 tsp. pepper

Directions
Combine dressing ingredients in a lidded jar. Shake well. Set aside. Place salad ingredients in a large bowl. Pour half the dressing over the salad and toss well, adding dressing to taste.

Grape & Broccoli Salad

Suggested Pieces: 3.5 Qt. Insulated Bowl

Ingredients
3 lbs. fresh broccoli florets, chopped
2 c. red seedless grapes, halved
1 1/2 c. celery (#2 cone)
1 red onion (#2 cone)
1 lb. bacon, cooked and chopped
1/4 c. sunflower seeds
1/2 c. chopped pecans (#3 cone)
Dressing
1 c. mayonnaise
1/2 c. sugar (or honey)
2 tbsp. apple cider vinegar
Black pepper to taste

Directions
In a small bowl, whisk together mayonnaise, sugar, vinegar, and pepper until smooth. In a 3.5 Qt. Insulated Bowl, combine broccoli, grapes, celery, onion, and bacon. Pour dressing over salad mixture; toss until evenly coated. Cover with plastic wrap and refrigerate, about 2 hours. Just before serving, add sunflower seeds and nuts. Mix well. Serve chilled.

Honey Garlic Chicken Stir Fry

Suggested Piece: 11" Large Skillet

Ingredients
1 lb. boneless, skinless chicken breast, cut into bite sized pieces
2 c. broccoli florets
1 c. carrot (#4 or #5 cone)
4 cloves garlic (#1 cone)
1/4 c. chick broth, low sodium
3 tbsp. honey
1/4 c. soy sauce (or liquid aminos)
2 tsp. cornstarch
Salt & pepper to taste

Directions
In 11" Large Skillet add broccoli and carrots, cover and set heat to medium. When Vapo-Valve clicks reduce heat to low and cook for approx 4 minutes (vegetable should still be crisp with vibrant color). Remove vegetables from skillet and set aside. Return skillet to stove and increase temperature to medium-high heat. Season chicken pieces with salt and pepper and add to skillet; turn to brown all sides, and cook through. Add garlic to chicken and saute briefly. Add broccoli and carrots back to the skillet, cover and cook until warmed through. In a small bowl whisk together chicken broth, honey, and soy sauce. In a separate bowl mix cornstarch with 1 tbsp. cold water. Pour the soy sauce mixture over the chicken and vegetables; cook 30 seconds. Add cornstarch mixture to skillet and bring to a boil; cook for 1 more minute or until sauce has just started to thicken. Serve immediately over rice! Yum!

Honey Lime Rainbow Salad

Suggested Piece: 3.5 Qt. Cold Bowl

Ingredients
1 lb. fresh strawberries (#3 cone)
1 lb. fresh pineapple, diced
12 oz. fresh blueberries
12 oz. red grapes, halved
4 kiwis, peeled and diced
1 (15 oz.) can mandarin oranges in juice, drained well and sliced into halves
2 ripe bananas (#4 cone)
Honey Lime Dressing
1/4 c. honey
2 tsp. lime zest (zest of 2 medium limes #1 cone)
1 tbsp. fresh lime juice (#1 cone)

Directions
Add all fruit to a 3.5 Qt. Cold Bowl. In a separate small mixing bowl, whisk together the honey, lime zest and lime juice. Pour over fruit just before serving and toss to evenly coat (as it sits for a few minutes the juices will gather at the bottom, so toss again before plating).
Tip: Freeze bananas before processing on #4 cone to get cleaner slices.

Kale & Quinoa Salad

Suggested Piece: 3.5 Qt. Cold Bowl

Ingredients
For the Salad:
1 c. quinoa
1 large bunch (about 6 cups) kale, tough stems removed, chopped, and rubbed
15 oz. can chickpeas, rinsed & drained (optional)
1 c. blueberries
4 oz. goat/feta cheese, crumbled (optional)
½ c. sliced almonds
1 avocado, cubed
For the Dressing:
¼ c. extra virgin olive oil
¼ c. lemon juice
2 tbsp. honey
1 ½ tsp. Dijon mustard
¼ tsp. Kosher salt
Dash of black pepper

Directions
Prepare quinoa using the knuckle method. Transfer to a large bowl to cool. Meanwhile, make the dressing. Whisk together all dressing ingredients in a large salad bowl. Add the kale and, using your hands, toss it with the dressing. Once the quinoa is cool, add it to the bowl with the kale, along with the chickpeas (if using), blueberries, goat cheese (if using), almonds, and avocado. Toss gently to combine. Serve.

Baked Honey Sriracha Lime Chicken

Suggested Piece: 11" Large Skillet

Ingredients
2 lbs. of meat, poultry, or fish
2 tbsp. butter
1/3 c. honey
1-5 tbsp. sriracha sauce (the more the spicier!)
2 limes (one juiced, one for slicing)
2 tbsp. soy sauce, low sodium
1 tsp. garlic (#1 cone)
1 tbsp. chopped cilantro

Directions

Place meat, poultry, or fish in skillet, lay pieces of butter on top. In small bowl whisk honey, sriracha sauce, lime juice, soy sauce, and garlic. Pour 1/2 mixture over meat, poultry, or fish. Top with thinly sliced lime and cilantro. Cover and cook over medium heat until Vapo-Valve clicks. Reduce heat to low until meat, poultry, or fish is cooked through (approx. 40-45 minutes.) Drizzle remaining sauce mixture over top before serving.
Gluten Free Alternative: substitute soy sauce for Bragg's liquid aminos.

Crunchy Cabbage Salad with Spicy Peanut Dressing

Suggested Piece: Medium Cold Bowl

Ingredients
3 Tbsp. Peanut butter, reduced-fat & smooth
4 Tbsp. Cider vinegar
1 1/2 Tbsp. Water
2 tsp. Honey
1/4 tsp. Salt
1/2 tsp. Ground black pepper
1 Jalapeno, finely chopped
1 Red or green bell pepper, thinly sliced
3 Green onions or scallions, chopped
1/4 head Green cabbage (#3 cone)
1/4 head Red cabbage (#3 cone)
1/4 c. Peanuts, chopped & unsalted

Directions
In Medium Cold Bowl add peanut butter, vinegar, hot water, honey, salt, and pepper. Finely chop the jalapeno, seeding it for a less spicy salad. Add jalapeno into the bowl. Use a whisk or fork to combine until dressing is smooth. Quarter the bell pepper, removing and discarding the seeds. Thinly slice the bell pepper and chop the scallions. Add both into the bowl, along with the green and red cabbage. Use tongs or a spatula to fully combine the vegetables with the dressing. Chop peanuts and sprinkle over the salad. Let sit a few minutes for flavors to absorb. Serve.

Butternut Squash Soup

Suggested Piece: 4 Qt. or 5 Qt. Roaster 

Ingredients
5-6 pieces of chopped bacon
1/4 sweet onion (#2 cone)
2-3 stalks of celery, stringed (#2 cone)
1 tbsp. minced ginger (#1 cone)
1 clove garlic (#1 cone)
1 large butternut squash (#2 cone)
1 box chicken broth
1/4 cup honey
1/4-1/2 cup of heavy whipping cream
Dash of nutmeg
Salt and pepper to taste

Directions
Saute bacon until crispy, remove and set aside. Add diced onion, celery, ginger and garlic. Cook until onions are translucent and ginger is fragrant. Pour broth over sautéed veggies and add shredded squash. Medium click low until tender, approximately 20-30 minutes. When squash is soft, add honey, whipping cream, and seasonings. Blend until smooth and serve topped with reserved crispy bacon.
