Ingredients
2 large potatoes (#3 cone)
1 large onion (#3 cone)
5 garlic cloves (#1 cone)
2 tsp. dried rosemary
Salt & pepper to taste
1 large head cauliflower (#3 cone)
2 jarred roasted red peppers, chopped
6 c. chicken broth
1 lb. kale, stemmed & sliced
1/4 tsp. nutmeg
Pecorino Romano cheese (#1 cone)
Directions
Over medium heat (350F) add potatoes, onion, and garlic to bottom of MP5, season with rosemary, salt and pepper until softened. Add in cauliflower, red peppers, broth, kale, and nutmeg. Cover and cook over medium head until Vapo-Valve clicks. Reduce heat to low (185F) and continue cooking for an additional 5-10 minutes. Serve in bowls and top with Pecorino Romano cheese! Chicken & Rice
Suggested Piece: 12" Electric Skillet
Ingredients
6-9 chicken thighs, bone-in, skinless
2 c. rice (brown, wild, long grain, etc.)
3 1/2 c. chicken broth
1 tsp. poultry seasoning
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. half & half
1 carrot (#1 cone)
1 celery stalk (#2 cone)
1/2 onion (#2 cone)
5-6 mushrooms (#3 cone)
1/4 c. parsley, chopped
Directions
Preheat 12" Electric Skillet on 450F until drops of water form beads. Press chicken thighs into skillet to sear one side (5-7 minutes). Season chicken with poultry seasoning, salt, and pepper. Once chicken releases from the skillet, flip over and press opposite side into pan to sear (5-7 minutes). Remove chicken from skillet, set aside. Reduce heat to 350F. Add carrot, celery, onion, and mushrooms; saute until onions are translucent. Add rice, broth, and half & half; stir to combine. Add chicken back to skillet; cover and cook on 350F until Vapo-Valve clicks. Reduce heat to 185F and continue cooking for 20 minutes. Garnish with chopped parsley.
Tip: Change the seasonings, vegetables, and herbs to create your own masterpiece! For example, omit poultry seasoning, half & half, carrot, celery, mushroom, and parsley. Season chicken with chili powder and cumin. Saute onion, green chilis, and garlic before adding rice, enchilada sauce, and chicken broth. Then garnish with chopped cilantro for a version of Arroz con Pollo!

2 c yellow onion, #2 or #3 cone
4 celery stalks, #2 cone
2 med carrots, #1 or #2 cone
4 garlic cloves, #1 cone
1 tsp. dried thyme
4 med potatoes, #3 cone
8 c. chicken or vegetable broth
2 bay leaves
5 1/2 c. frozen corn
2 med zucchini, #2 or #3 cone
2 c. half & half
Salt & pepper to taste
Chopped fresh parsley to garnish
Cayenne pepper, to serve (opt.)
Directions

Ingredients
9 c broccoli (#3 cone)
3/8 tsp salt
3/8 tsp pepper
3/8 tsp garlic powder

8 oz Neufchatel cream cheese
1/2 c cheddar cheese (#1 cone)
Directions
In 7 Qt Roaster add chicken broth, broccoli, garlic powder, salt, and pepper. Cover and cook over medium heat. When Vapo-Valve clicks reduce heat to low and cook for approximately 15 minutes. Add a few cups of warm soup to blender with cream cheese, blend until smooth. Pour cream cheese and soup mixture back into 7 Qt and stir to combine. Serve in bowls topped with 1 tbsp cheddar cheese per bowl.

1/4 c. lemon juice
1/2 c. chicken broth
Small bunch fresh mint leaves
2 c. fresh cilantro leaves
1 jalapeno, chopped coarsely
4 garlic cloves (#1 cone)
1/2 tsp. ground cardamom
1/2 tsp. cinnamon
1/8 tsp. ground cloves
1 c. full-fat coconut milk
Fresh ground black pepper to taste
Directions
In a skillet over medium heat (approx. 300F), add the onion with the olive oil (opt.). Cook, stirring occasionally until the onion starts to soften. Add chicken thighs and turmeric to the skillet and continue cooking (approx. 7 mins.) Place the lemon juice, broth, mint, cilantro, jalapeno, and garlic in a blender or food processor and blend until you obtain a smooth puree. Add the cloves, cardamom, and cinnamon. Cook for just about a minute. Add in the coconut milk, season to taste with freshly ground black pepper and add the herb puree. Cover and cook over medium heat until Vapo-Valve clicks. Then reduce heat to low for approximately 15 minutes or until the chicken is well cooked and tender. Serve immediately.

Sausage Cornbread Stuffing
Suggested Piece: 3 Qt. Saucepan with Perforated/Culinary Basket
Ingredients
1 pkg. Premium Pork Regular Sausage
2 c. chopped celery
1 c. finely chopped onion
4 c. coarsely crumbled cornbread
¼ c. chopped fresh parsley
1 tsp. poultry seasoning
1 c. chicken broth
1 egg, lightly beaten
½ c. chopped pecans (opt.)
Directions
De-grease the sausage by cooking it in the 3 Qt. Perforated Basket /or Culinary Basket over 1/2 inch of water in the 3 Qt. Roaster on medium-high temperature. While cooking the fats & oils will drip into the water instantly making your meat leaner! Remove basket and pour out greasy water. Saute celery and onion in bottom of 3 Qt. Saucepan over medium heat for 8-10 minutes or until softened and onions are translucent. Add cornbread, parsley and seasoning; mix lightly. Add broth and egg; mix just until blended. Stir in pecans, if desired. Cover a cook over medium-low heat for approx. 15 minutes or until thoroughly heated.
Optional: Just before serving, uncover and place in oven under the broiler to toast the top.

Ultimate Green Bean Casserole

4 slices hearty bread, torn into small pieces
2 tbsp. butter, softened
¼ tsp. salt
⅛ tsp. pepper
6 oz. (about 3 cups) canned fried onions
For the beans and sauce:
2 lbs. fresh green beans, trimmed and halved crosswise
Salt & pepper to taste
3 tbsp. unsalted butter
1 lb. white mushrooms, sliced thin
3 garlic cloves, minced
3 tbsp. flour
1½ c. chicken broth
1½ c. heavy cream
Ingredients

Combine the bread pieces, softened butter, salt and pepper in a blender or food processor and pulse until crumbles are coarse. Toss with canned fried onions in a large bowl and set aside.
For the beans and sauce:
Place frozen green beans in 11" Large Skillet and cook using the medium - click - low method for 5 mins. Remove from heat and place blanched green beans in paper towel lined colander.
Melt 3 tablespoons butter in 11" Large Skillet over medium heat. Add mushrooms, garlic, ¾ teaspoons salt and ⅛ teaspoon pepper. Cook until the mushrooms release their moisture and then liquid evaporates, about 6 minutes.
Add 3 tablespoons flour and cook for 1 minute, stirring constantly. Add in the broth and simmer, stirring constantly. Stir in the heavy cream and cook until liquid thickens and reduced to about 3½ cups, or for about 12 to 15 minutes. Add salt and pepper to taste, if desired.
Stir in green beans. Sprinkle with topping, cover and cook over medium heat about 15 mins. Remove cover and place under broiler until topping is golden brown.
Tip: For a new spin on an old favorite substitute green beans for halved Brussels sprouts! Also, if you want to make this ahead mix up your bread-crumb topping and store it in the refrigerator for up to 2 days. Combine with onions just before baking. You may make the bean and sauce mixture and refrigerated, covered, for up to 24 hours. To serve, heat casserole in 425 degree oven for 10 minutes, then add topping and bake as directed above.

Place sweet potato, shallots, celery and mushrooms in Culinaire with olive oil until coated; season with salt and pepper. Cover and cook using the medium-click-low method for approximately 15 minutes. Creamy Chicken & Corn Chowder
Suggested Piece: MP5 or 5 Qt. Roaster
2 Chicken breasts, cooked & shredded
3 tbps. Butter
¼ c. Flour
2 boxes Chicken broth
2 med. Potatoes (#3 cone)
3 c. Fresh or frozen corn
½ c. Cream
Salt & Pepper to taste
Chopped chives for garnish (opt.)
Directions
In bottom of MP5 or 5 Qt. Roaster melt butter over medium heat. Add flour and cook, stirring for approx. 2 mins. Gradually add the chicken stock, whisking until smooth. Add the potatoes and bring to a boil. Add the corn, cover and cook until Vapo-Valve clicks. Reduce heat to low and cook until potatoes and corn are tender, approx. 10 mins. Add the shredded chicken and cook for an addition 2 mins. Add the cream and stir to combine. Salt & pepper to taste and garnish with chives.

Honey Garlic Chicken Stir Fry
Suggested Piece: 11" Large Skillet
Ingredients
1 lb. boneless, skinless chicken breast, cut into bite sized pieces
2 c. broccoli florets
1 c. carrot (#4 or #5 cone)
4 cloves garlic (#1 cone)
1/4 c. chick broth, low sodium
3 tbsp. honey
1/4 c. soy sauce (or liquid aminos)
2 tsp. cornstarch
Salt & pepper to taste
Directions
In 11" Large Skillet add broccoli and carrots, cover and set heat to medium. When Vapo-Valve clicks reduce heat to low and cook for approx 4 minutes (vegetable should still be crisp with vibrant color). Remove vegetables from skillet and set aside. Return skillet to stove and increase temperature to medium-high heat. Season chicken pieces with salt and pepper and add to skillet; turn to brown all sides, and cook through. Add garlic to chicken and saute briefly. Add broccoli and carrots back to the skillet, cover and cook until warmed through. In a small bowl whisk together chicken broth, honey, and soy sauce. In a separate bowl mix cornstarch with 1 tbsp. cold water. Pour the soy sauce mixture over the chicken and vegetables; cook 30 seconds. Add cornstarch mixture to skillet and bring to a boil; cook for 1 more minute or until sauce has just started to thicken. Serve immediately over rice! Yum!

Lemon Rice Pilaf
Suggested Piece: 3 Qt. Saucepan
Ingredients
1 1/2 tbsp. EVOO (optional... but evens out garlic flavor)
1 tsp. garlic (#1 cone)
1/2 onion (#2 cone)
2 c. rice
1-2 boxes chicken broth (knuckle method)
1 tsp. lemon zest
3-4 tsp. lemon juice
3 tbsp. chopped parsley
3 tbsp. chopped dill
Salt & pepper to taste
Directions
Saute in 3 Qt. over medium heat EVOO, garlic, and onion. Once onion is soft, stir in rice and chicken broth. Cover and cook rice over medium heat until Vapo-Valve clicks. Reduce heat to low and cook rice for approx. 15-20 min. Add lemon juice, zest, parsley, dill, salt & pepper and fluff with a fork.

Butternut Squash Soup
Suggested Piece: 4 Qt. or 5 Qt. Roaster
Ingredients
5-6 pieces of chopped bacon
1/4 sweet onion (#2 cone)
2-3 stalks of celery, stringed (#2 cone)
1 tbsp. minced ginger (#1 cone)
1 clove garlic (#1 cone)
1 large butternut squash (#2 cone)
1 box chicken broth
1/4 cup honey
1/4-1/2 cup of heavy whipping cream
Dash of nutmeg
Salt and pepper to taste
Directions
Saute bacon until crispy, remove and set aside. Add diced onion, celery, ginger and garlic. Cook until onions are translucent and ginger is fragrant. Pour broth over sautéed veggies and add shredded squash. Medium click low until tender, approximately 20-30 minutes. When squash is soft, add honey, whipping cream, and seasonings. Blend until smooth and serve topped with reserved crispy bacon.

Arroz con Pollo
Suggested Piece: Multipurpose 5 Qt (MP5)
Ingredients
2 lbs. boneless/skinless chicken breasts, cubed
1 onion (#2 or #3 cone)
32 oz. chicken broth, low sodium
4 oz. can tomato sauce, low sodium
4 oz. can diced green chilies
1 tsp. cumin
1 tsp. chili powder
1 tsp. garlic powder
1 tsp. sea salt
2 c. brown rice, parboiled
2-3 zucchinis (#3 cone)
1 container grape tomatoes, halved
1/4 c. cilantro, chopped
2 medium limes, garnish
Directions
Preheat MP5 to 300°F. Add chicken and onions. Cover and allow chicken to cook for 15 minutes, stirring intermittently. In medium bowl, whisk together chicken broth, tomato sauce, green chilies, and spices. Add broth mixture to chicken and onions in MP5 and combine. Add brown rice to chicken mixture and gently fold together. Reset MP5 temperature to RIC1, cover, and continue to cook. Once the timer set at RIC1 expires, add zucchini into electric roaster, re-cover, and allow to cook for 3-5 minutes. Set heat to 150°F to keep warm prior to serving. Plate and sprinkle with grape tomatoes and cilantro. Garnish with lime wedges.

Corned Beef Brisket & Cabbage
Ingredients
1 6-pound corned beef brisket with spices
1 large onion (#3 cone)
12 ounces light lager beer
2 c. chicken or beef stock
3 bay leaves
1 large green cabbage, cut into 12 wedges (leave core intact)
1 lb. carrots, trimmed and cut in half
3 lbs. Yukon gold potatoes, cut in half or quarters
Directions
Trim excess fat from corned beef brisket. Preheat Braiser Pan over medium heat. When several drops of water sprinkled on pan skitter and dissipate, approximately 5-7 minutes, place corned beef in pan, fat side down. Place cover on pan slightly ajar and cook corned beef until browned on all sides, approximately 15 minutes. If corned beef does not fit in pan, cut into 2 pieces, browning each piece separately. Add onions, beer, stock and bay leaves. Cover. When Vapo-Valve clicks, reduce heat to low and cook for 4 hours. Add cabbage, carrots and potatoes in pan around corned beef and cover. Cook for an additional 1 - 1 1⁄2 hours until meat and vegetables are tender. Slice meat on the diagonal into thin slices and serve with some of each vegetable and a little bit of braising liquid.

Stuffing
Suggested Piece: 5 Qt. Roaster or MP5
Ingredients
4 boxes stuffing mix
6 c. (48 oz.) chicken, turkey, or vegetable broth
2 stalks of celery (#2 cone)
1 apple (#2 cone)
1 medium onion (#2 cone)
1 apple (#2 cone)
1 medium onion (#2 cone)
4-8 tbsps. butter
Directions
Over medium heat sauté celery, apple, and onion in butter until soft. Pour in chicken broth and cover until Vapo-Valve clicks. Reduce heat to low and fold in bread crumbs. Keep covered on medium-low heat until ready to serve.
Option A: Substitute 1 apple (#2 cone) for 1 carrot (#1 cone).
Option B: Omit apple and toss in a handful of dried cranberries and pine nuts.
