Butter Chicken

Suggested Piece: 12" Electric Skillet (EOC)

Ingredients
2 lbs chicken thighs (bone-in, skinless)
3 tbsp. fresh lemon juice
Salt
1 tsp. garlic (#1 cone)
1 tbsp. ginger (#1 cone)
2 tsp. garam masala

Sauce
1 medium yellow onion (#2 cone)
1 serrano chile, chopped
1 tbsp. fresh lemon juice
1/4 c. tomato paste
1 1/4 c. coconut milk
1 tsp. garam masala
1/2 tsp. ground cumin
Salt
Cilantro for garnishing

Directions
Preheat 12" Electric Skillet to 400F. Add chicken thighs, lemon juice, salt, garlic, ginger, and garam masala to a gallon ziploc bag; shake to coat. Marinate for a few hours or overnight. If you don't have time for that, then get cooking! Shake drops of cold water onto skillet. They should bead and dance if skillet is properly preheated.  Place chicken in hot skillet and press down to sear. Remember, it is not necessary to use any oil or grease. Chicken will stick at first, but will release when properly browned. Flip to sear opposite side. Remove chicken to a plate and set aside.

Sauce: Add yellow onion and serrano chili to bottom of EOC and deglaze until onion is translucent. Add lemon juice, tomato paste, coconut milk, garam masala, cumin, and salt to skillet; wisk until combined. Add chicken to skillet and cover in sauce.

Place cover on top skillet and continue to cook over low heat until ready to serve. Garnish with chopped cilantro and serve over jasmine/basmati rice, or alongside Naan bread. Thank you Martha Stewart for bringing your power to each one of our cooking schools!

Kung Pao Beef Zoodles

Suggested Piece: 10" Chef Gourmet Skillet

Ingredients
4 medium zucchinis (#2 cone)
16 oz steak, cut into 1" pieces
Salt & pepper to taste
1 red bell pepper (#3 cone)
2 tsp sesame oil
4 cloves garlic (#1 cone)
2 tsp ginger (#1 cone)
4 tbsp crushed dry roasted peanuts
4 tbsp green onions, sliced

Sauce:
3 tbsp soy sauce
2 tbsp balsamic vinegar
2 tsp hoisin sauce
1 tbsp red chili paste
4 tsp stevia (sugar)

Directions
Using the #2 cone processes zucchini's into "noodles" and set aside. Salt and pepper steak and brown in 10" Chef Gourmet Skillet over medium high heat. Reduce heat to medium and add bell pepper, sesame oil, garlic, and ginger. Cover and cook over medium heat until Vapo-Valve clicks. Reduce heat to low and cook for approximately 10 minutes. Meanwhile, whisk together all ingredients for sauce in small bowl. Pour sauce over steak mixture and heat through. Remove from heat and fold in zucchini "noodles". Serve immediately.

Sirloin & Broccoli Stir Fry


Suggested Piece: 5 Qt. Gourmet Wok & 1 Qt Saucepan

Ingredients
1 tbsp cornstarch
1 tbsp low sodium soy sauce
1 tsp ginger (#1 cone)
1 garlic clove (#1 cone)
1 lb boneless sirloin steak, trimmed, cut into 1/4" crosswise strips
1 c brown rice
1 c low sodium beef broth
2 tbsp hoisin sauce
1 tsp toasted sesame oil
3 oz broccoli florets
1 yellow squash (#3 cone)
4 green onions, sliced
2 oz red cabbage (#5 cone)

Directions
Put cornstarch in a medium bowl. Add the soy sauce, ginger, and garlic, whisking to dissolve the cornstarch. Add the beef, turning to coat. Cover and refrigerate for 10 minutes, turning occasionally. Meanwhile, prepare the rice in 1 Qt Saucepan. In a small bowl, whisk together the broth, hoisin sauce, and sesame oil. Set aside. In 5 Qt Gourmet Wok cook the beef mixture over medium-high heat for 5 minutes until beef is browned on the outside. Transfer beef to a large plate. In the same wok, over medium heat, stir together the remaining ingredients. Cover and cook until Vapo-Valve clicks, reduce heat to low for 2-3 minutes. Return the beef mixture to the wok. Pour in the broth mixture, stirring to combine. Cook for 1-2 minutes, or until the broth mixture thickens, stirring occasionally. Serve over brown rice.

Egg Roll in a Bowl

Suggested Piece: 11" Large Skillet

Ingredients
2 tbsp. sesame oil
6 green onions, sliced (green & white parts divided)
1/2 red onion (#2 cone)
5 cloves garlic (#1 cone)
1 lb. ground pork
1 tsp. fresh ginger (#1 cone)
2 - 3 tbsp. sriracha
1/2 head green cabbage (#4 cone)
1 carrot (#1 cone)
3 tbsp. coconut aminos
1 tbsp. rice wine vinegar
Salt and pepper to taste

Creamy Chili Sauce
1/4 c. Mayonnaise
Sriracha
Salt to taste

Garnish
Black sesame seeds 
Green parts of onion

Directions
Heat sesame oil in skillet over medium heat. Add white parts of onions, diced red onion, and garlic; saute until soft. Add ground pork (degreased), grated ginger, 1 tbsp. sriracha, and heat through. Add green cabbage, carrot, coconut aminos, rice wine vinegar, salt and pepper; cook stirring regularly until cabbage is tender. Meanwhile, in a small bowl whisk together 1/4 c. mayonnaise and 1 - 2 tbsp. sriracha. Add a pinch of salt to taste. Plate cabbage and pork, drizzle with sauce, and garnish with sesame seeds and green parts of onion.

Brazilian Beer Marinated Chicken

Suggested Piece: 11" Large Skillet

Ingredients
4 garlic cloves (#1 cone)
2 tsp. ginger root (#1 cone)
1 onion (#4 cone)
1 tbsp. sweet paprika
1 tbsp. salt
1 tsp. black pepper
1/2 tsp. caraway seeds
1/2 green bell pepper, finely chopped
1/4 c. Dijon mustard
2 c. dark lager or stout
1/4 c. avocado oil
4 boneless, skinless chicken breast halves
2 tbsp. butter
1/4 c. cilantro, chopped

Directions
In gallon Ziploc bag combine garlic, ginger, onion, paprika, salt, black pepper, caraway seeds, green pepper, mustard, beer, and oil. Add the chicken, seal bag, and refrigerate for 4 hours. Preheat skillet over medium high heat. Add chicken to skillet and brown on both sides (approx. 5 min per side) until cooked through. Brush with butter and sprinkle cilantro over the top.

Jamaican Stew

Suggested Piece: 9 Qt. Braiser

Ingredients
1 1/2 c. chopped onions (#2 cone)
3 c. sweet potatoes (#3 cone)
1 1/4 tsp. sea salt
1 1/2 tsp. ground coriander
1/2 tsp. ground cumin
1/2 tsp. ground turmeric
1 tsp. dried thyme
1/2 tsp. ground allspice
1/4 tsp. crushed red pepper flakes
1 can coconut milk (5.5 oz.)
3 1/2 c. water
2 cans black beans (15 oz.), rinsed and drained
3 c. cauliflower florets
2 tbsp. ginger (#1 cone)
3 tbsp. lime juice (#1 cone)
3 c. baby spinach
1/4 c. fresh cilantro, chopped

Directions
In 9 Qt. Braiser over medium heat sauté onion, sweet potato, salt, coriander, cumin, turmeric, thyme, allspice, red pepper flakes and 1/4 of the can of coconut milk. Cover and cook until VapoValve clicks (approximately 6 to 7 minutes). Lift lid and add the water, beans, cauliflower, ginger, and remaining coconut milk. Cover and cook until VapoValve clicks; without lifting the lid reduce heat to low and cook for approximately 10 to 12 minutes. Life lid and stir in lime juice, spinach, and cilantro; remove from heat. Serve immediately!

Pear, Apple, & Chicken Salad

Suggested Piece: 3.5 Qt. Insulated Bowl

Ingredients
2 chicken breasts, cooked & chopped
1 pear (#3 cone)
1 apple (#3 cone)
3 c. romaine lettuce, chopped
1/2 c. walnuts (toasted and drizzled with 2 tsp. honey)
1/2 c. Gorgonzola cheese
Dressing
1/4 c. fresh lemon juice (#1 cone)
1/4 c. EVOO
4 tbsp. honey
Balsamic vinegar
1/8 tsp. ginger
1/4 tsp. salt
1/2 tsp. pepper

Directions
Combine dressing ingredients in a lidded jar. Shake well. Set aside. Place salad ingredients in a large bowl. Pour half the dressing over the salad and toss well, adding dressing to taste.

Asian Cucumber Sesame Salad

Suggested Piece: 3.5 Qt. Insulated Bowl

Ingredients
2 Cumbers (#3 cone)
1 Medium Jicama (#3 cone)
1/2 Red Onion (#3 cone)
1 c. Mini Bell Peppers, diced
Dressing
2 tbsp. Rice Vinegar
1 tbsp. Lime Juice (about 1/2 a lime)
1 tbsp. Soy Sauce, low sodium or Liquid Aminos
1 tsp. Fresh Ginger (#1 cone)
1 tbsp. Sesame Oil
2 tbsp. Sesame Seeds
2 tbsp. Agave
Pinch of Red Pepper Flakes, or to taste

Directions
Process cucumbers, jicama, and red onion on #3 cone into 3.5 Qt. Insulated Bowl. Toss with diced mini bell peppers. In a small separate bowl whisk together all the ingredients for the dressing. Pour dressing over salad and toss to coat. Enjoy immediately!!!

Pork Tenderloin with Cranberry Salsa

Suggested Piece: 5 Qt Roaster or 11" Large Skillet and Medium Cold Bowl

Ingredients
Pork
1 lb. Pork tenderloin (all visible fat discarded)
1/4 tsp. Paprika
1/4 tsp. Salt
1/4 tsp. Pepper
1/8 tsp. Garlic powder
Salsa
1 c. canned Pineapple chunks (or fresh if you have it!)
1/2 c. Dried cranberries
1/4 c. Red onion (#2 cone)
1 medium Poblano pepper, seeded, finely chopped
1 tsp. Ginger (#1 cone)
1/2 tsp. Ground cinnamon

Directions
Place pork in bottom of piece being used. In a small mixing bowl combine paprika, salt, pepper, and garlic powder. Rub mixture over pork and let stand while making salsa. Combine all ingredients for salsa in Medium Cold Bowl. Spoon salsa over pork. Cover and cook until Vapo-Valve clicks, reduce heat to low for approx. 30 minutes.

Cooking Tip: For a milder dish or if poblanos are not available, use a mediumm green bell pepper instead. If you'd still like a little heat, add 1/8 tsp. dried red pepper flakes to the salsa.

Butternut Squash Soup

Suggested Piece: 4 Qt. or 5 Qt. Roaster 

Ingredients
5-6 pieces of chopped bacon
1/4 sweet onion (#2 cone)
2-3 stalks of celery, stringed (#2 cone)
1 tbsp. minced ginger (#1 cone)
1 clove garlic (#1 cone)
1 large butternut squash (#2 cone)
1 box chicken broth
1/4 cup honey
1/4-1/2 cup of heavy whipping cream
Dash of nutmeg
Salt and pepper to taste

Directions
Saute bacon until crispy, remove and set aside. Add diced onion, celery, ginger and garlic. Cook until onions are translucent and ginger is fragrant. Pour broth over sautéed veggies and add shredded squash. Medium click low until tender, approximately 20-30 minutes. When squash is soft, add honey, whipping cream, and seasonings. Blend until smooth and serve topped with reserved crispy bacon.

Orange Chicken

Suggested Piece: 11" Large Skillet

Ingredients
4-5 frozen chicken breasts
2-4 oranges, sliced
Sauce
1 c. orange marmalade
1/4 c. soy sauce
1 tbsp. fresh ginger
Salt and Pepper to taste

Directions
Layer sliced oranges on bottom of 11" Large Skillet, then a layer of frozen chicken, and top with another layer of sliced oranges. Whisk together ingredients for sauce and pour over the top. Cover with lid and set heat to medium until Vapo-Valve clicks. Reduce heat to low and cook for approximately 30-60 minutes.



Unfried Rice

Suggested Piece: 5 Quart Roaster

Ingredients
1/2 small head green cabbage (#4 cone)
1 red onion (#2 cone)
1 pkg. mushroom (#4 cone)
2-3 carrots, (#2 cone)
2 tbsp. fresh ginger (#1 cone)
2 cloves garlic (#1 cone)
4 c. cooked rice
2-4 tbsp. soy sauce
1-2 tsp. sugar
Salt & Pepper to taste

Directions
In bottom of 5 Quart Roaster saute green cabbage, red onion, mushroom, carrots, fresh ginger, and garlic over medium heat. Stir in cooked rice. Whisk together soy sauce, sugar, salt and pepper. Drizzle over rice and mix.

Asian Coleslaw

Suggested Piece: Saladmaster Machine, Insulated Bowl

Ingredients
1 small head green cabbage, quartered (#4 cone)
1/2 small head of red cabbage, quartered (#5 cone)
1 c. edamame, shelled
2 carrots (#2 cone)
2 tbsp. green onions, chopped
1 tbsp. fresh ginger (#1 cone)
1/2 c. almonds, sliced & toasted
1 c. chow mein noodles

Dressing
2/3 c. olive oil
1/3 c. rice wine vinegar
1/3 c. honey/agave
2 tbsp. soy sauce
1/4 tsp. sesame oil

Directions
Combine all ingredients in bowl. For dressing... add all ingredients in a jar, and SHAKE, SHAKE, SHAKE! Drizzle over salad and toss!

Pumpkin Pudding

Suggested Piece: Saladmaster Thermal Bowl

Ingredients
1/2 tsp. cinnamon
1/8 tsp. ginger
1/2 tsp. clove
1/4 tsp. baking soda
3/4 c. pumpkin puree, canned
1 1/4 c. cold milk
1 pkg. butterscotch pudding mix
1 1/4 c. Cool Whip

Directions
Combine spices and baking soda in bowl. With electric mixer combine pumpkin and spices. Add milk and pudding and continue to beat for one (1) minute. Fold 1/2 cup of the Cool Whip into the mixture. Garnish with remaining Cool Whip. Yields 6 servings.

Sweet Potato Pancakes

Suggested Piece: 11" Square Griddle, 3 Qt. with Culinary Basket

Ingredients
1/2 c. mashed sweet potato
2 eggs
3/4 tsp. ground cinnamon
Pinch of ground ginger
Pinch of allspice
Pinch of salt
Cooking spray (opt.)

Instructions
Process sweet potato on #2 cone and cook in 3 qt. with culinary basket; stir to mash and let cool. Whisk together 1/2 c. of mashed sweet potato and eggs until well-combined. Add seasonings and stir. Preheat 11" square griddle. Drop the sweet potato mixture by spoonfuls on griddle. Flip each cake and cook until lightly golden brown on the outside and cooked through.

Optional topping ideas: butter, nut butter, sunflower seed butter, or maple syrup.
