Ingredients
1/2 c. olive oil
Juice of one lemon
1 tsp. Dijon mustard
1 small clove garlic, minced
Fresh ground pepper to taste
Directions
Put all ingredients in a jar or other container with a lid and shake until emulsified. Use to dress salad immediately before serving and refrigerate any remaining dressing for up to 3 days.
